2 large eggs (or egg substitute: 2 Tbs flaxseed meal steeped in 6 Tbs warm water)
3/4 cup yogurt, dairy or non-dairy
1/2 cup peeled and diced fresh peaches, fresh or frozen berries, raisins, chopped nuts, chocolate chips, etc. OR for Cinnamon Swirl Scones, use 2 Tbs melted butter mixed with 1 tsp cinnamon & 1 Tbs brown sugar
